Can you overcook chicken in a pressure cooker? It is very easy to overcook chicken breast in pressure cooker, as we cannot check the temperature and level of doneness during the cooking process. Once upon a time, I overcooked a chicken breast in pressure cooker so badly that it registered at over 200°F on my food thermometer.
How long does chicken thighs take to cook?Boneless, skinless chicken thighs cook quickly, in 15 to 20 minutes, depending on the size. Bone-in thighs, however, take a bit more time, between 25 and 30 minutes. Use a thermometer to measure the internal temperature of the thighs. They're finished cooking when the temperature reads 165°F.
Does pressure cooking chicken longer make it more tender?Cooking any meat on high heat (or high pressure) for an extended period will both: denature more the proteins / collagen making the meat more tender; "squeeze" more water out of the meat, making it drier / chalkier in texture.
Why is my pressure cooked chicken tough? If your boneless chicken breast winds up with a weird, rubbery texture, it probably means that you need to cook it longer. In general, the Instant Pot does better with longer cook times for meat.
