You just can’t go wrong with classic macaroni and cheese. This Easy Baked Mac and Cheese will have everyone coming back for a second helping.
Easy Baked Mac and Cheese
- 3 cups shredded Cheddar cheese, divided
- 2 cups elbow macaroni, cooked according to package directions
- 3 large eggs
- 1 cup evaporated milk
- ½ cup sour cream
- ½ teaspoon kosher salt
- ¼ cup unsalted butter, cubed
- Preheat oven to 350°. Spray an 8-inch square baking dish with cooking spray.
- In a large bowl, stir together 2 cups Cheddar and hot cooked pasta until combined. In a medium bowl, whisk together eggs, evaporated milk, sour cream, and salt. Stir egg mixture and butter into pasta mixture until combined. Pour mixture into prepared pan.
- Bake until hot and bubbly, about 30 minutes. Sprinkle with remaining 1 cup Cheddar, and bake until cheese is melted, about 5 minutes more. Let stand for 10 minutes before serving.

- 3⁄4 lb elbow macaroni
- 3 cups shredded sharp cheddar cheese (10 oz.)
- 3 large eggs
- 1⁄2 cup sour cream
- 1 cup milk
- 4 teaspoons unsalted butter, cut into small pieces

- Preheat oven to 350 degrees.
- Lightly butter an 8x12" baking dish.
- In a pot of boiling salted water, cook the macaroni until al dente. Drain, transfer to a bowl.
- Add two cups of the cheese and toss until melted.
- In another bowl, whisk the eggs with the sour cream.
- Add the milk, butter, and 1/2 teaspoons salt.
- Stir the mixture into the macaroni and pour it into the prepared baking dish.
- Sprinkle the remaining cheese on top.
- Bake for 35 minutes, until bubbling and cheese is melted.
- Let the macaroni and cheese stand for 15 minutes before serving.

8/04/08 Definitely a hit with my boyfriend and I. We like more of a bite to our dishes so we added Parmesan cheese and Asiago cheese to the mix. UPDATE: 2/24/09 Made it again and had less sour cream, but added green onions. Wonderful!
Delicious! We made this tonight with salisbury steaks for Independence Day. It is more of a casserole and is very easy to make. We will definitely keep this one handy.

Not your typical mac and cheese. It is more casserole like than creamy mac & cheese.
I liked the sour cream. I did a few things different. My husband likes meatballs so I made them small w/ Italian seasoning and added them. I sliced some onions really thin and sauteed them w/ garlic. All I had was mild cheddar cheese but I think I'd have preferred the sharp ceddar. The sauce part really turned out good. This recipe is a keeper. Thanks!
