Ingredients

To make this recipe, you will need chicken breasts, potatoes, water or chicken broth, olive oil and some seasoning.

I like to use a combination of salt, pepper, thyme, oregano, parsley and onion powder, but you can find more seasoning suggestions below, or simply use what you like.

Instructions

  1. Cut the potatoes. I like to cut them into large chunks. Baby potatoes can be kept whole.
  2. Add chicken, potatoes, seasoning and oil to a mixing bowl, and stir to coat the chicken and potatoes evenly.
  3. Pour the chicken broth into your instant pot. Add the chicken to the broth, and place the potatoes on top of the chicken.
  4. Turn the valve to sealing, and turn on the PRESSURE COOK or MANUAL setting for 15 minutes.
  5. Leave the pressure to naturally release for 5 minutes before turning the valve to do a quick release of the remaining steam. Be careful, as the steam can be hot!
  6. Serve the instant pot potatoes and chicken immediately while they are still warm.

Top tips

  • The natural release process is important, as the dish will continue to cook during this time. Don't skip it!
  • I don't bother peeling my potatoes, but if you want to do this, I recommend peeling them after cooking.
  • As chicken can taste quite plain when it's poached in the instant pot, it's important to season it generously.

Leftovers

Leftover chicken and potatoes store really well in a sealed container in a refrigerator for up to 2 days. I like to store mine in portion sized containers for quick and easy lunches and dinners.

Reheat the leftovers in the microwave for a few minutes, or place them in an oven safe casserole dish and reheat them in the oven for around 10 minutes or until they are warm.
