How to broil flank steak in oven

Flank steak can a fairly tough cut of meat due to its leanness. Our simple marinade has just four ingredients and is the perfect way to prep flank steak for the grill. While acidic citrus juice and salty soy sauce act to both season and tenderize the steak, olive oil helps to keep the meat supple and juicy. A small amount of brown sugar brings out the meat's natural sweetness and helps to create a slightly caramelized crust once the steak hits the grill.

While the marinade is 100 percent optional, we promise you won't regret it. All you need is 30 extra minutes of marinating time to make that steak extra flavorful and extra delish.

Can you use another oil? The marinade is super flexible. You can use another oil, but olive oil's flavor has a buttery note that more neutral oils like vegetable and canola just won't provide. For the soy sauce, you can substitute in tamari to make it gluten-free, or use Worcestershire or fish sauce for a funkier kick. No citrus on hand? Use an equal amount of balsamic vinegar for the right balance of sweetness and acidity.

  1. Combine oil, soy sauce, water, brown sugar, ginger, garlic, and pepper in a small bowl. Mix until combined.

  2. Cut shallow slashes in a crosshatch pattern on both sides of the steak, being careful not to cut all the way through.

  3. Place steak in a low, flat dish and pour marinade on top, covering meat completely. Cover and refrigerate at least 4 hours, or overnight, turning steak over once.

  4. Set an oven rack about 6 inches from the heat source and preheat the oven's broiler. Remove steak from the marinade and place on a baking pan. Reserve marinade.

  5. Broil, brushing occasionally with marinade, until browned and heated through, about 5 minutes per side. Remove steak to a platter and cover loosely with foil. Let rest for at least 5 minutes. Slice into 1- to 2-inch strips across the grain.

Cook's Note:

Cook steak on the grill if preferred. Grill directly on the grate, brushing occasionally with the marinade.
